In a big pot over medium warmth, melt butter. Upload carrots and celery and season with salt and pepper. Cook, stirring regularly, until greens are tender, approximately 5 mins. Upload garlic and cook dinner until fragrant, about 30 seconds.

Add flour and stir until veggies are lined, then upload hen, thyme, bay leaf, potatoes, and broth. Season with salt and pepper. Deliver combination to a simmer and prepare dinner until the chicken is no longer red and potatoes are tender, 15 minutes.

Take away from heat and transfer chicken to a medium bowl. Using two forks, shred hen into small pieces and go back to pot.

Garnish with parsley before serving.
